Duck with Jack Daniel’s Barbecue Sauce
I know that many of you do cook your ducks whole, so here’s a spirited recipe for your next barbecued or oven-roasted duck. As an option, you may want to cut off the legs and roast them in sauce for a few hours to make them tender (covered, 450 degrees). If you want to save some of the Jack Daniel’s for drinking, you can forego the marinade and baste the birds with sauce while cooking, but thin the basting sauce out with some orange juice or it will burn and look ugly.

Game Bird Pot Pie
Let’s suppose that you take a look in the freezer and find that you have a few quail, some pheasant breasts, a dove or two, maybe a rabbit…not enough for individual meals, but if you throw it all into a pile, it’s dinner. You can make your own pastry dough. It’s actually pretty easy. I make it even easier by buying prepared puff pastry dough from the freezer section of my grocery store.
Ceviche
It’s not really cooked in the traditional sense, but then it’s not sashimi either. The acidic lime juice actually “cooks” the fish, shrimp and scallops. Serve in a glass bowl, or get really fancy and serve inside a melon or other large fruit.
Fried Whole Fish
I prepared this recipe on HuntFishCook with a beautiful little Florida Pompano, but you can do it with any fish that will fit into a pan of hot oil.
Grilled Yellowtail with Spicy Peppercorn Oil
This Spicy Peppercorn Oil is best made a day ahead, so plan accordingly. In a pinch, you can make a fast batch and just slap it on your fish, but it’s mo’ betta after a day or two. It really brings out the flavor of the fish.

Pickled Shrimp
Those of you might not think this shrimp looks really appetizing – but trust me, it tastes delicious. Keep refrigerated and it will keep for some time for you. Great appetizer for a football party or backyard bbq.
Dungeness Crab Cakes
Also works with picked blue crab and, if you’re out of crab, cooked flaky white-fleshed fish fillets work well, too. Just make sure that the crab meat has been patted dry with two-ply paper towels. If it’s too wet, it won’t hold together when cooked. Serve with flavored aioli, tartar sauce, clarified butter or cocktail sauce.
